Easy Chicken Marinade

Chicken is ALWAYS on our weekly menu as I'm sure its on yours too...  If you're like me, I'm always looking for different marinades for boneless, skinless chicken breasts.  Found the following just the other day and it turned out great!  What I especially liked is that the chicken marinated for only 2 hours and still had great flavor.  Perfect those nights when you just get home from work and don't have a ton of time to marinate.  

Easy Chicken Marinade (enough for 4 chicken breasts)

1/2 C Low Sodium Soy Sauce
2 TBSP Olive Oil
2 tsp minced garlic
2 tsp minced ginger
2 TBSP brown sugar

Throw it all in a baggy and let it marinate for a couple hours.  The way I prepared the chicken is I tore off foil squares and placed a chicken breast in the center of each foil square with a tablespoon or two of the marinade and sealed it to make a little, tented packet.  I then put it in a preheated 425 degree oven for 25 minutes.  It turned out great (and no dishes to clean after the fact)!

The next day we had an extra chicken breast so I went to Heinen's and picked up their whole wheat pizza dough.  I rolled out the pizza dough, topped it with sliced roma tomatoes, diced the chicken breast and sprinkled it over the dough, threw on some fresh basil leaves and topped it all with mozarella.  I then drizzled a little high quality olive oil over the entire pizza and threw it in a 400 degree preheated oven for about 20 minutes.  Very filling and absolute heaven!
